If your meal was so yummy you want to lick your plate clean then there must have been lots of “umami” involved. This savoury taste – one of our five basic tastes – is extremely familiar to all of us; but we often don’t really know how to conjure it, especially when preparing vegetarian meals. And yet umami is exactly the secret component you need to make sure everyone really enjoys their meal, "even" if entirely without meat! And that's true both for your everyday cooking and when preparing traditional festive dinners.
 
 
The umami cookery course with vegan cook & journalist Clarissa Juse will provide the theoretical basics including practical tasting to find out what exactly umami is on a molecular level and how we can use and apply it when cooking. Together we'll also prepare a umami dinner with several courses including the perfect vegan gravy (with only 3 ingredients!) as well as a delicious vegan Sunday roast.
 
If possible, please bring along an apron, a chopping board and a knife.
